The theory

After multiple years of journey in making clear ice, we have our own point of view on it.

We know temperature affects the speed of freezing. But how does the temperature change when ice forms in the tumbler? Let's see something special.

Tumblers cannot change the trend of the water getting colder and colder when freezing, but they can prevent the ice from freezing too fast. On the condition that the ice is more accessible to catch water than others, the slower freezing speed gives impurities and bubbles more time to escape from the transition surface.

Slow freezing allows water molecules to form a regular, hexagonal crystal lattice as they preferentially bond with each other (left).

Rapid freezing increases the probability of water molecules bonding with impurities, disrupting the orderly crystallization process and resulting in a more chaotic, amorphous ice structure (right).
